A New Vegetarian Cookbook, Spicy Chickpeas with Tomatoes & Kale + More Recipes to Make Right Now


Friends, hello!

Yesterday my copy of Jenny Rosenstrach's new book, The Weekday Vegetarians Get Simple, arrived, and about 30 minutes later the above-pictured tart, the book's cover photo, emerged from my oven.

It was one of the fastest dinners I've ever assembled in a very long time and a reminder that a handful of good ingredients — good puff pastry, excellent tomatoes, deliciously creamy blue cheese — go a long way.

Three years ago, Jenny wrote The Weekday Vegetarians, in which she shared a real-life plan for eating less meat. So many of the recipes in that book became instant favorites for my family, namely the Spicy Chickpeas with Tomatoes and Kale (see below).

Jenny's new book continues the pursuit to highlight all the ways vegetarian dinners can become less of a chore and more of a ritual, but takes it a step further, addressing the most common obstacles that "prevent dinner-makers from taking the plant-based leap."

I have so many recipes bookmarked, namely the Miso Mushroom Tacos with Pickled Cabbage and the Crispy Sweet Potatoes with Lemon-Yogurt tDressing and Dukkah. How good do those sound?! I know you all will love this book!!
